DISTILLERY

Our distilling family of three has been passionate about sourcing local since day one, and it began with our Australian Copper Still, fondly named ‘Doug’ after our Great Uncle who used to soothe his ‘toothache’ with an evening G&T. ‘Doug’ was handcrafted in Ballarat specifically for Ambleside and as we anxiously anticipated the arrival of our still we began building our tasting bar and planting our botanical walk that is now flourishing with a range of botanicals used in the distilling process. Our signature Gins were launched in 2017 and new releases keep coming so keep an eye on the website for updates, or join our mailing list.

Head to our Tasting Bar in Hahndorf and meet our Distillers and hear about our passion for creating Award winning South Australian Gin that celebrates our local Adelaide Hills area and produce. Enjoy a G&T, cocktail or local food share plates on the deck overlooking the countryside. Shop from our online store or of course you can buy direct from the Distillery and Tasting Bar.

TASTING BAR

We’re located on the main road as you enter Hahndorf and your experience begins with a walk through our Distillery Garden planted with some of the botanicals used in the production of our Gin. Our oversized timber cedar doors welcome you to the Distillery and Tasting Bar that oozes character with polished concrete floors, lots of natural timber, reclaimed red brick walls and windows that open up to the outdoor deck surrounded by rural countryside.

Pull up a chair at the bar and let our knowledgeable and passionate bartenders take you through our range of unique drinks. Try a Tasting Flight, a cocktail or enjoy a share plate showcasing some of Australia’s best local meats and cheeses. Our range of amazing cocktails created by our own bartenders is changing all the time and we also offer beer, soft drinks and a few other options.

The copper Still is on display and you can meet with Distillers and learn about distilling. You can drop in for a visit, or book a table via tastingbar@amblesidedistillers.com or 0408 834 010. Group bookings and Experience bookings are essential.

Experience our 3 signature gins, served with ice and a bottle of tonic. Our knowledgeable bartenders will take you through the unique tasting notes for each gin with the accompanying garnishes for an extra tasting sensation.

Get the full experience with a tour of our distillery room. One of our Distillers will guide you through our special place and our passion for creating Award winning South Australian Gin. See our Australian made copper still ‘Doug’ followed by a Tasting Flight in our Tasting Bar. Bookings essential.

Gin Blending Masterclass

An intimate small group Gin Blending Experience at the distillery. Choose from over 22 distilled botanicals to create your own unique blend of Gins to take home. The experience starts with a Gin Tasting Flight, followed by a talk from one of our Distillers about the notable botanicals we use in our own Gins. You will then be able to meet ‘Doug’ our Australian made copper still and hear about the distillation process. To finish, you will be creating and blending your own personal Gins, while our distillers guide you through and help you to create gin’s like no other. Participants will receive 2 x 200ml bottles of Gin. Duration: 60 minutes. Scheduled Masterclass dates are published on our website and email us to book via tastingbar@amblesidedistillers.com

Signature Recipe
No. 8 Botanical Negroni

Bitter, citrusy and short. A classic cocktail showcasing the zesty citrus notes of No. 8 Botanical Gin

Ingredients

  • 30mls No. 8 Botanical Gin
  • 30mls Antica Formula Vermouth
  • 30mls Campari
  • 2 drops Angostura Bitters

Method

  1. Stir over ice in a mixing glass
  2. Double strain into a rocks glass over a large ice cube
  3. Garnish with orange peel
