About our distillery

Sunny Hill Distillery sits atop one of the highest points on the Yorke Peninsula 5km North of the township of Arthurton. The tasting room and deck have amazing rural views to the North and West overlooking some of the best cereal cropping land in the state. Built on our family founded and owned farm since 1872, our modern distillation journey has now begun.

Production

Our production facility is designed to make single malt Whisky, therefore we have the production equipment to make many other styles of spirits. Being farm based we use as much of the on site grown grains for our production.

Products

Wheat Vodka – Our Wheat Vodka is made using 100% raw wheat grown on our property. It is mashed, fermented, distilled and bottled completely on site making this a true “crop to drop” product.
Dry Gin – To make our Dry Gin we start with our 100% Wheat Vodka as the base and redistill this with our six botanicals to create a gin that is quite juniper forward yet the complexity adds many floral notes and nutty citrus.

Pink Gin – Our Pink Gin also uses our 100% Wheat Vodka as the base which is then redistilled with 7 botanicals to create a flavour profile that is dominated with raspberries and roses with juniper and strawberry gum in the background creating a slightly sweeter product.

Chocolate Liqueur – This is made by infusing our 100% Wheat Vodka with the worlds finest ethically sourced Belgian cocoa and premium “bourbon” vanilla beans resulting in an intense rich chocolate flavour, balanced with creamy caramel undertones and sweet aromatic vanilla.

Coffee Liqueur – Infusing our 100 % Wheat Vodka with The Smelters Café Cold Drip Coffee creates a wonderful drink that is excellent neat or equally as good in an Espresso Martini.

Whisky – Our Whisky is made using barley grown on our property, when the grain is ready we take it off site to get malted. This Sunny Hill Malt Barley then forms 100% of our grain bill which is mashed, fermented, distilled and laid to rest in an oak cask. Projected first release of Whisky will be late 2021.
Rum – Our rum is made using combinations of molasses and brown sugar to make a full bodied dark rum. This is fermented, distilled and laid to rest in oak casks. Projected first release of Rum will be late 2021.
